The Food and Drug Administration has proposed changes to the labeling requirements of cheese. They want to allow cheese producers to use something called “ultra-filtered milk”but list it as milk.

The problem is ultra-filtered milk isn’t milk because all lactose, minerals and vitamins have been removed. As a result it is cheaper than fluid milk and powdered milk and food processors don’t want you to know their using it.
